Happy Healthy Monday

I am finally over being sick. Fingers crossed I don’t get it again. Winter is just around the corner now here in Iowa. I was enjoy the 70 degree weather in November but knew it wouldn’t last.

We get our dumpster on Friday so I get to start dumping things. I am hoping by cleaning the house and moving to a new one will bring new things. New things are what I need right now.  Thing in the Bond household are not that great so I need something to give, for the better.

I have so much emotional stress it’s unreal, which in turns makes me eat. LOL I am hoping by joining the new Shrinking Jeans challenge I will be able to stay on the straight and narrow and lose some of this weight i have gained.

Healthy brown rice instead of boring white bread stuffing. Crisp apples complement the nutty flavor of the brown rice and bran.

Cooking Time: 40 mins

Servings: 8 

Ingredients

1 1/2 cups uncooked brown rice
3 1/2 cups Apple NESTLÉ® JUICY JUICE® All Natural 100% Juice, divided
2 teaspoons margarine
1 apple, diced
1/2 cup chopped onion
1/2 cup sliced celery
1/3 cup raisins
1/2 teaspoon poultry seasoning
1/4 teaspoon dried thyme, crushed
1/4 teaspoon ground black pepper
1/3 cup bran
1/3 cup slivered almonds

Directions

PREPARE rice according to package directions, using 3 1/4 cups Juicy Juice for the liquid.

MELT margarine in large skillet over medium-high heat. Add apple, onion, celery, raisins, poultry seasoning, thyme and pepper; cook, stirring occasionally, until vegetables are crisp-tender. Stir in rice, bran, nuts and remaining 1/4 cup Juicy Juice.

USE as stuffing for poultry or pork roast, or place in greased 13 x 9-inch baking pan and bake in preheated 350° F oven for 35 minutes.

    And something you kind of said real fast that I think is aweesome is that you’re trying to find a different way to deal the emotional stress than just by eating. That? Is huge.
