Monday Schmonday

I hate Monday’s. I am always so tired from the busy weekend. I again forgot to weigh myself but that is okay. Scale doesn’t matter as long as I know I did my best and feel good about it.

Tonight I am going to try to go to Target and get a Walk Away the Pounds kit. Anyone recommend one to get? This way I can do them at home and Cooper can do it with me if he wants.

Well that is it for me. Just going to keep on keeping on this week. Work has been super busy and my days just fly by. Speaking of which I need to get at it.

Pumpkin Chocolate Brownies

Servings: 16

Ingredients Nonstick cooking spray
1/2 cup LIBBY’S® 100% Pure Pumpkin
1/3 cup brown sugar blend (such as SPLENDA)
1 large egg
2 large egg whites
2 tablespoons vegetable oil
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon NESTLÉ® TOLL HOUSE® Baking Cocoa
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/3 cup NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Mini Morsels

Directions PREHEAT oven to 350° F. Spray 8- or 9-inch-square baking pan with nonstick cooking spray.

COMBINE pumpkin, sugar blend, egg, egg whites and oil in large mixer bowl. Beat with an electric mixer on medium speed until blended. Add flour, baking powder, cocoa, cinnamon, allspice, salt and nutmeg. Beat on low speed until batter is smooth. Stir in morsels. Spread evenly into prepared pan.

BAKE for 25 to 30 minutes or until wooden pick inserted near center comes out clean. Cool in pan on wire rack. Cut into 2-inch squares.

  1. Those look YUM!!! I ended up getting Leslie Sansone’s 5 mile bootcamp. She adds in resistance bands to do some arm and upper body work as well!

  2. mmm those look good…and only 100cals, I am adding this to my shopping list for later!

    I got Leslie’s ultimate collection, which was one dvd with a 1, 2, 3, or 4 miles walk w/ resistance band…got it at target for around $10 or $15 dollars. I like being able to choose if I walk a short walk or a longer one.

  3. I have some of the older Walk Away the Pounds dvds. I really have enjoyed them. Hope you like them.

    The recipe looks great – will have to save that for this fall when I’m craving pumpkin smells 🙂

  5. I like the Walk DVDs that have multiple options for walks. That way if you’re having a tired day you can do a 2 mile but on an awesome day you can do a 4 or 5 mile. I’ve heard the weighted gloves are awesome from others but haven’t tried them myself. Oooh, let us know what you got when you get it!

  7. I was NOT expecting that. Those look sooo good. And I’m full from lunch! I have Leslie’s mini walks, 2 mile, 3 mile and 4 mile Super Walks. Can’t speak for anything else, but I’m certain that, regardless of what you buy, you’ll be happy with it. Leslie has a wonderful personality and she has this energy that is really motivating.

  8. Those brownies sound awesome! I have the Walk Away the Pounds ultimate collection. 4 workouts on one DVD. Gives me options. It’s a great workout to squeeze when life is hectic.
