Happy Healthy Monday
Man I so didn’t want to come back from vacation. Let me tell you I walked a TON and tried to eat a bit healthier. Food was so expensive there compared to here. Wow.. My feet held up pretty well thanks to my Earth Footwear but my knees had some issues. So I hope I can get back into the swing of things now I am back and lose some of this weight. I think hubby and I both realized it needs to be done. We got wore out in Chicago.
We did find a Subway and ate there to try to keep things healthy. I normally eat Subway at least once or twice a week. It’s such a good alternative to fast food. We would have eaten there for breakfast but we never got up in time. LOL
So my goals this week is to just worry about my eating. Healthy choices all around. I am still drinking my water (see the pic I sent @mentallyinked) and I drank a TON of it on vacation. Not one soda! So I think if i can get a handle on my food this week I can add in some exercise soon. Maybe take Cooper to the park at night a couple time or just for a walk.

Ingredients
3 tablespoons fresh lime juice
4 teaspoons granulated sugar
1/4 teaspoon hot pepper sauce
2 medium mangoes, peeled and cubed
1 medium carrot, peeled and grated
1/4 cup red bell pepper, thinly sliced strips
1/4 cup fresh mint, chopped
Directions
COMBINE mangoes, carrot, bell pepper and mint in medium bowl. Toss with juice mixture to coat. Refrigerate for 1 hour before serving.

Glad you had such a great vacation! I was actually surprised to see post a few tweets on Twitter while you were gone. Many congratulations on drinking water and no soda – I know it’s a hard habit to break! But, it probably really helped your hydration while doing all that walking.
Have you noticed that things taste saltier now that you’re only drinking water? That was one of the first “major” changes I noticed when I stopped drinking sodas. Now, everything tastes a little saltier to me but I feel MUCH better.
