Happy Healthy Monday
Well it’s almost Tuesday.. The holiday threw me for a loop. I swear it was only Sunday today. Oh well better late than never. I don’t have much to report this week. I have been slacking on everything but I am hoping to get some sound advice on where to go. I was excited to hear about the Taebo videos from Gaiam on sale. I ordered 2. The amped Cardio and Fat Burner. Rachel said they were good. Here is the link if your interested.
Pete Cohen was generous enough to give away his 28 day nutrition plan. Congrats to him as he was chosen to be on the Biggest Loser team in England. He is for sure the best weight loss guru out there. He will get your mind straight.. He gave it to me free a while ago and I think it’s time to repay it a visit. I need to freshen up on those videos.
This week I am just going to focus on my eating. I can’t wait for my taebo to get here so I can start doing some of that. I didn’t have any big events this weekend so I didn’t do too bad.. I hope you all had a good week and have a super one this week. Here is a recipe for ya in honor of Kia and here no meat challenge.
Vegetarian Fajitas
These vegetarian fajitas are so tasty and filling, the meat won’t be missed at all.
Estimated Times
Preparation Time: 15 mins
Cooking Time: 6 mins
Servings: 4
1 small onion, quartered and sliced
1 small red, green or yellow bell pepper, cut into strips
2 to 3 cloves garlic, finely chopped
1 can (15 ounces) black, pinto or kidney beans, rinsed and drained
3/4 cup whole-kernel corn
1/2 cup bottled salsa
1/3 cup water
2 teaspoons ground cumin
1/2 teaspoon salt
1/2 teaspoon ground oregano
1/4 cup chopped fresh cilantro
4 (6-inch) fajita-size reduced-fat flour tortillas, warmed
Lime wedges (optional)
HEAT oil in large, nonstick skillet over medium-high heat. Add onion, bell pepper and garlic; cook, stirring occasionally, for 3 to 4 minutes or until vegetables are tender.
STIR in beans, corn, salsa, water, cumin, salt and oregano; bring to a boil. Reduce heat to low; cook, stirring occasionally, for 3 to 4 minutes. Remove from heat; stir in cilantro.
SERVE in tortillas; top with a squeeze of lime juice.

Yummy, yummy recipe. Good luck with your eating efforts this week. Watch the portions and eat the stuff you know you should be eating. It isn’t about deprivation but much like the fajitas… the things you enjoy. At our farmers market there is a family that makes fabulous wheat tortillas that I tear up for burritos or corn ones that I use for tacos (both with great ingredients and fiber).
