Happy Healthy Monday

Am super glad this holiday is over. Man oh man the food is unreal. I think I gained about 10lbs or at least it feels like it. Ready to move on and get on with losing this weight.  So my over all weight loss for December was 6 or 8lbs I can’t remember where I started. LOL I should write these things down. So I will take that. 

How many of you got fitness gifts this year? Well I bought myself a new pair of Earth Footwear because my others ones had seen better days. That was about all fitness related I got. I did get my new coffee maker I wanted. I love the K Cup makers.  Our old one had seen better days so I am super happy for a new one.

How was your holidays? Are you making New Year’s resolutins? I don’t make them because I never keep them so I am just going to be the best me I can be in 2011.

Ravioli with Black Bean Salsa

Ingredients

1 package (9 ounces) BUITONI Refrigerated Four Cheese Ravioli
1 jar (16 ounces) mild salsa
1 can (14.5 ounces) black beans, drained
1 1/2 tablespoons finely chopped cilantro
1/2 cup (2 ounces) shredded Monterey Jack cheese

Directions

PREPARE pasta according to package directions.

HEAT salsa and black beans in medium saucepan; gently fold in pasta. Top with cheese and cilantro.

  1. Yum! Thanks for the fabulous recipe. I want to make that one. Black beans are one of my favorite proteins.

    Sounds like you have a great plan… being the healthiest you is a GREAT goal! And 6-8 lbs down for December is amazing. Keep it up.

    I got myself the EA Sports Active 2 for the Wii and a pair of Sketchers Shape Ups tennis shoes. I haven’t sat down and made my resolutions yet, I am just coming down from the holiday madness. But, today and tomorrow I will probably be thinking about changes I am hoping to make.

  4. I got 2 track suits! One from my mom and one from my MIL. (I had to take one back because it was too big!) Plus I got my Wii as an early Christmas present. No complaining from me! I love that this Christmas, my family “got” me. Hugs!
