Happy Healthy Monday

Well we have decided to finally get the house ready to sell and find something bigger. Which I have already found a house I love, from pictures, but we are no where close to even being ready. The house I like has been on the market already for 6 months so I hope it will be for a couple more so I can go look at it. If I look at it now I will really fall in love with it and be heartbroken when I can’t have it. So this weekend I was busy cleaning, throwing stuff out, and started painting the bathroom.  Hopefully this week I will get to painting the kitchen once the bathroom is done.

As for weight loss, not the best week but did manage to lost 1lbs so I am down a total of 10 in about 2 months. I will take it. I really need to bring my lunch with me on a more constant basis.  SO Subway is in order today I think.  I don’t think I will have much time for the gym because I am using all the spare time I have to get the house ready. But that in itself is a workout. LOL

Sweet Corn Casserole

Estimated Times

Cooking Time: 40 mins
Cooling Time: 15 mins cooling

Servings: 8 servings

Ingredients 1/2 cup masa harina flour (Mexican corn masa mix)
1/4 cup (1/2 stick) butter or margarine
2 tablespoons vegetable shortening
2 cups frozen whole-kernel corn, partially thawed
3 tablespoons cold water
1/4 cup granulated sugar
3 tablespoons yellow corn meal
2 tablespoons NESTLÉ® CARNATION® Evaporated Milk
1/4 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon chili powder (optional)

Directions PREHEAT oven to 350° F. Lightly grease 9-inch pie plate.

PLACE flour, butter and vegetable shortening in food processor; cover. Process until creamy. Add corn and water; process until corn is coarsely chopped. Combine sugar, corn meal, evaporated milk, baking powder and salt in medium bowl. Stir in corn mixture until combined. Spread into prepared pie plate. Sprinkle with chili powder.

BAKE for 40 to 50 minutes or until firm and lightly browned around edge. Cool on wire rack for 15 minutes before serving. Scoop or cut into wedges to serve. Nutritional Information

    I totally know what you mean about looking at a house and then not being able to have it and being so upset. Before we found this house, that happened to us. Kylie was devastated!!!
