Happy Healthy Monday

OMG someone please kick me! I have been extremely lazy these last 2 weeks. I mean to a point it’s out of control now.  My house is so dirty, I haven’t been to the grocery store in 2 weeks, and I can’t seem to find any energy. This has got to change. We have been eating out like mad. I am hoping tonight my Mom will watch Cooper so hubby and I can get to the store. Long over due. So please give me a hard kick to get going.

My knee is better but this cold is kicking my butt. I think that is part of the reason I have no energy. I so need an IV of coffee today. How can a 3 year old manage to hog a queen size bed. Told hubby we need to get a bigger one. LOL 

My goal this week is to move more. I don’t care how I do it at this point but more movement is required. I didn’t get much on over the week, hence the way I started this post.  The weather is cooler so I hope maybe at night I can take Cooper for some walks. 

I am so excited Pete will be on Mamavation tv tonight but sad I will miss him. I have to get stuff done at home and will probably miss out but whomever gets the program will love it. I learned a lot from it, just need to DO IT. UGH Okay onto why your here.. the recipe

Easy Cinnamon-Vanilla Pancakes

A burst of cinnamon-vanilla flavor in each bite, these moist and fluffy pancakes make a great back-to-school breakfast treat.

Estimated Times
Preparation Time: 5 mins
Cooking Time: 5 mins

Servings: 14 pancakes

Ingredients 2 cups all-purpose baking mix
1 cup Fat Free Cinnamon Vanilla Crème or Cinnamon Vanilla Crème Flavor NESTLÉ COFFEE-MATE Liquid Coffee Creamer
1/2 cup LIBBY’S® 100% Pure Pumpkin
2 large eggs
Maple syrup

Directions COMBINE baking mix, Coffee-mate, pumpkin and eggs in large bowl; stir until blended.

GREASE griddle or large, nonstick skillet. Heat over medium-high heat. Pour about 1/4 cup pancake batter onto hot griddle for each pancake; cook for 2 to 3 minutes on each side or until golden. Repeat with remaining batter. Serve with syrup. Nutritional Information

  1. First, those pancakes look so DELISH!!! I will have to try them.

    Second – I know it seems overwhelming, but I assure you that movement is KEY to getting energy back. Starting is the hardest part, but once you do – even for 10 minutes – you’ll feel better and you’ll be glad you did.

    It is hard, but so worth it! Just remember, if you don’t take care of yourself, you can’t take care of anyone or anything else… GOOD LUCK! Have a Happy, Healthy, WEEK!

  3. I get so excited for your posts Karla! Not only do I like to hear how you are doing, but I know you will have some yummy food for me to drool over! You did not disappoint this week. My hubby and boys are going to love these!!!
    Hope your knee continues to get better and that cold, you are not alone with that darn thing, goes away. Flush it out with some nice warm tea and lots of water!!

  5. I know how you feel! My house is a mess, and the heat is only making things worse. I’m tired of fast food and take out, and so is my bank account. It’s really too hot to cook, but I’m going to crank up the AC and do it anyway.

  6. Hang in there! Sounds like you’re moving toward getting out of the rut. I definitely go through periods like that. Like my soccer coach used to say, pull up your socks, or reach into them or something like that. Do something with your socks. K? : )

  7. Hey Karla,
    You’re being too hard on yourself. You can’t do everything that you would like when you’re sick. You need to take things one step at a time. Take tiny steps and then congratulate yourself for each step of the way. That’s what I do- baby steps.
