Happy Healthy Monday
Well it’s almost Tuesday now. I am finally done with my blogging internship so I can get back to focusing on my site again. Boy that Kelly McCausey sure teaches you a ton of stuff. I am so thankful for the opportunity. If anyone followed my love for TV on her site, Family TV Addicts, please know that I will not stop blogging for my love of TV. I hope to either continue there, if Kelly lets me, or start a site of my own. I think I found my passion.
Weight wise goes, my passion is still lost. There are 3 gals here at work doing WW so I hope I can hook up with them to keep me going. We will see how that goes. I am still new here and don’t want to step on any toes. All I know is I have to do something. My homework for tonight is to find 5 new recipes to try that are weight friendly then make my grocery list to go tomorrow.

Vegetarian Fajitas
These vegetarian fajitas are so tasty and filling, the meat won’t be missed at all.

Preparation Time: 15 mins
Cooking Time: 6 mins
Servings: 4
Ingredients 1 tablespoon vegetable oil
1 small onion, quartered and sliced
1 small red, green or yellow bell pepper, cut into strips
2 to 3 cloves garlic, finely chopped
1 can (15 ounces) black, pinto or kidney beans, rinsed and drained
3/4 cup whole-kernel corn
1/2 cup bottled salsa
1/3 cup water
2 teaspoons ground cumin
1/2 teaspoon salt
1/2 teaspoon ground oregano
1/4 cup chopped fresh cilantro
4 (6-inch) fajita-size reduced-fat flour tortillas, warmed
Lime wedges (optional)
Directions HEAT oil in large, nonstick skillet over medium-high heat. Add onion, bell pepper and garlic; cook, stirring occasionally, for 3 to 4 minutes or until vegetables are tender.
STIR in beans, corn, salsa, water, cumin, salt and oregano; bring to a boil. Reduce heat to low; cook, stirring occasionally, for 3 to 4 minutes. Remove from heat; stir in cilantro.
SERVE in tortillas; top with a squeeze of lime juice. Nutritional Information

OK can I tell you how hungry I am now after seeing that Picture! I say hook up with those people at work for WW. It is better to do it as a group and at work it makes it even better!
