Happy Healthy Monday
Hey everyone I hope your having a great day! I hope everyone stayed cool this past weekend. Our heat index got up to 110. Too hot for me. We pretty much stayed inside.
We got Cooper a blow up pool that he wanted to spend all his time in. We had to bribe him to come inside. Thankfully I can see him from the kitchen window so I didnt’ have to sit outside with him. I drip sweat just doing to the car. Is the devil playing a trick on us?!?
Well I did it. I bit the big one and stepped on the scale. I thought for sure I would be at least 20lbs heavier that I actually am. I was shocked and thankful. Now that I know I haven’t done horrible I am pick up and keep going. I have to say I have been successful at bringing my lunch to work so that is a plus. I am still working on drinking the water which I have been doing better at. Boy do I miss my Kim @mentallyinked to challenge me.
So this week I will continue to work on my water and bringing lunch. I think I will now add in the no snacking at night. I seem to get hungry, so I think, around 9pm so I need to learn to either skip the snack or make it healthy. What do you all eat for a healthy snack?!?
Okay if you read my other article I just posted, 15 cheap healthy alternative foods, then you know that beans, broccoli and rice were on that list. Here is a recipe I found that covers all three of those. Enjoy your week everyone!
Broccoli & Bean Rice Pilaf
makes ~3 servings
2 cups Vegetable Stock
~1/4 c Water
1/4 Yellow Onion, chopped
1-1/2 tbsp Butter
Salt, Pepper, Thyme (fresh or dried)
1 cup Brown Rice, uncooked
Ground Red Pepper (or Red Pepper Flakes)
1 c Black Beans
~1 c Frozen broccoli, slightly thawed
In a small pot bring the stock and water (liquids) to a simmer. Heat the oven to 350*. In a separate, oven-safe deep sauce pan (or Dutch Oven), heat the butter on medium and add the onion. Sauté 4-5 minutes, add seasonings; add rice & stir well, then add the liquids.
Cover with a lid and put sauce pan in the oven. Bake for 35 minutes.
Remove, add broccoli & beans. Bake for an additional 10 minutes (broccoli softens).
Glad to hear about your good weight surprise! Isn’t that a great way to start the day? Oh, yeah… beans, rice and brocoli (when in season) are always on my list. I don’t think I have combined them all into one dish though.

That recipe looks very good, I’m going to add that to my lunch list this week.
I love having frozen grapes for a snack, especially during the summer. They are one of the few helthy things that will satisfy my sweet tooth.
