Happy Healthy Monday
Hope everyone has had a great week. I am slowly getting back on the eating healthy bandwagon. It’s such a process right?
The house process is killing me. We had an open house yesterday and we had 2 people come through. I was highly disappointed. I know it only takes one! I added St. Joseph in the house to bring me a buyer! I am so ready for this process to be over for sure. I don’t know how those people who flip houses do it.
Anyone reading a good book? I really need to get back to my reading but I have packed most of my books. LOL I am thinking of visitng the library to see what I can get. Janet Evanovich is my favorite. I do have one of hers out that I should finish. It’s been so long since I have picked up that book I am not sure what the heck is going on with it anymore.

Mediterranean Whole Wheat Tortellini and Shrimp Salad
Preparation Time: 10 mins
Cooking Time: 10 mins
6 large shrimp, cooked and sliced in half
1/2 cucumber, peeled, seeded and thinly sliced
1/2 cup halved grape or cherry tomatoes
1/3 cup light Greek dressing
5 thin slices red onion
3 tablespoons sliced kalamata olives
3 tablespoons crumbled feta cheese (optional)
ADD shrimp, cucumber, tomatoes, dressing, onion, olives and cheese; toss well.
