Happy Healthy Monday

I hope everyone has had a great week. Mine was okay. I am very frustrated that people have not come look at the house. It’s been on the market now 3 week, today, and only 1 person walked through. Although I am so exhausted from the weekend that the house isn’t ready for showing so I am sure someone will call today and I will be in a pinch.

Due to the fact that we might have 2 mortgages for a time we have been cutting back on things. One thing that is going is the gym. We really haven’t used it all that much this past year and for a good workout you really dont’ need a gym. So we are cancelling that.

I really need to get back to eating healthier. The past month or so I have slipped because I was so busy getting the house ready that I didn’t have time to prepare meals. Now that most of that is done and we are in a waiting pattern I need to get back to it. I have no idea how much I even weight but I am sure it isn’t good.

Peanut Sesame Pasta Salad

Estimated Times

Preparation Time: 20 mins
Cooking Time: 10 mins

Servings: 6

Ingredients

PEANUT DRESSING
1/2 cup creamy peanut butter
1/4 cup MAGGI TASTE OF ASIA Cooking Soy Sauce
1/3 cup warm water
2 tablespoons peeled, chopped fresh ginger
2 tablespoons rice vinegar
1 tablespoon MAGGI TASTE OF ASIA Sweet Chili Sauce
1 tablespoon honey
2 teaspoons MAGGI TASTE OF ASIA Chili Garlic Sauce

PASTA SALAD
12 oz. dry bowtie pasta
1 medium red bell pepper, cut into 1/8-inch strips
1 medium yellow bell pepper, cut into 1/8-inch strips
1 cup thinly sliced or chopped snow peas
1 medium carrot, cut into 1-inch matchstick-size pieces
4 green onions, thinly sliced
3 tablespoons sesame seeds, toasted

Directions

FOR PEANUT DRESSING:
PLACE
peanut butter, soy sauce, water, ginger, vinegar, sweet chili sauce, honey and chili garlic sauce in blender; cover. Blend until smooth. Transfer to large serving bowl. Refrigerate.

FOR PASTA SALAD:
PREPARE
pasta according to package directions. Drain under cold running water.

ADD pasta, bell peppers, snow peas, carrot, green onions and sesame seeds to dressing; toss to combine. Serve immediately.

SERVING SUGGESTIONS: Try topping salad with grilled chicken or steak.

    I hear you on the cost of gym. We were going to try to add a membership but we just can’t right now.=/
    Cleaning can burn a lot of calories so I hope you get your cleaning on this week while you watch what you eat!!

  3. We can not afford the gym either so most of my exercising is done at home. I wished I had a treadmill, but in spite of that I do go for walks and do the circuits. I try to get on the EA Sports 4 times a week also. That recipe looks awesome…I’ll have to give it a try. Good luck with selling the house. It’s not in NC by any chance is it LOL.

  4. I hope it sells soon. That is stress you don’t need. At least the weather is improving so you don’t have to rely on the gym to workout.

    You’re absolutely right, the gym doesn’t guarantee a good workout. You have to be more creative but you can totally come up with something great that works for you at home. (you might try entering some of the Bookieboo giveaways, there are always great DVD’s up for grabs ;P)
