Happy Healthy Monday
Happy Monday! Hope you all had a great week. This week will be super stressful for me. We move on Sat so it’s crunch time on the packing this week. We should close on the house Wed so I will be moving what I can Thurs and Friday I think. Im excited yet very stressed we haven’t sold our house yet. We were supposed to have a showing Saturday but they cancelled. Come on St. Jospeh!!
Last week I was great about bringing my lunches which helped not let me get fast food. This week I will continue that plus try to drink more water than I have been. Until I am moved I am just going to focus on what I can do here at work, since I am here 9 hours of the day, and then next week really buckle down and focus on losing this weight.
My friend @cheftraveler, my twitter friend, is a chef that has put together a healthy eating plan that I am going to try. He has helped many lose weight over the years by revamping recipes to make them healthier and easy to prepare. Check out his website My Diet Chef. Garlic Chicken and Spinach Skillet (From his My Diet Chef blog)
Serves 4
2 Tbsp. Olive Oil
2 cups packed fresh spinach leaves
3 garlic cloves, minced
2 chicken breast halves, cubed
1/2 yellow onion, diced
1 tomato diced
Salt and pepper to taste
1/4 cup feta cheese, crumbled
In a large saute pan heat half the oil with the garlic for a minute and then add the spinach. Turn the heat to hight and cook spinach stirring constantly until just cooked through and remove to a plate. Add the rest of the oil to the pan and add the rest of the ingredients (except for the cheese). Cook on high until the chicken is cooked through. Remove from heat and mix in the cooked spinach and feta cheese.
