Happy Healthy Monday
Good Monday morning. Whew what a weekend. We got some serious work done at the house. The kitchen is 90% painted. Just have to move the fridge and stove out. The bathroom ceiling is fixed and 50% painted. I boxed some things up that I don’t use often so it doesn’t look so cluttered. So we are getting there. Still have lots to do in the basement and I need to find homes for my cats yet. Then we need to lay carpet in the living room once they are gone. I hope hubby can do the basement in like 2 weeks so we can put the house up in 3-4 weeks. When it comes time to put it up I will hire a cleaning crew to give it a good once over before showing it. It’s exhausting.
As for weight loss well I gained a pound this week, I am back to just 9lbs lost. I need to bring my lunch. I don’t know why I am stuggling with that. Ugh.

Pumpkin Chocolate Brownies
Brownies made out of pumpkin? A perfect holiday brownie.

Ingredients Nonstick cooking spray
1/2 cup LIBBY’S® 100% Pure Pumpkin
1/3 cup brown sugar blend (such as SPLENDA)
1 large egg
2 large egg whites
2 tablespoons vegetable oil
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon NESTLÉ® TOLL HOUSE® Baking Cocoa
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1/3 cup NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Mini Morsels
Directions PREHEAT oven to 350° F. Spray 8- or 9-inch-square baking pan with nonstick cooking spray.
COMBINE pumpkin, sugar blend, egg, egg whites and oil in large mixer bowl. Beat with an electric mixer on medium speed until blended. Add flour, baking powder, cocoa, cinnamon, allspice, salt and nutmeg. Beat on low speed until batter is smooth. Stir in morsels. Spread evenly into prepared pan.
BAKE for 25 to 30 minutes or until wooden pick inserted near center comes out clean. Cool in pan on wire rack. Cut into 2-inch squares.

those brownies look delish! I will definitely be making those when I’m feeling better. I can understand the stress of moving – it can take a lot out of you. Be sure to get some “YOU” time in as well. it makes all the difference 🙂

Well I gained weight looking at the picture, but after working my way through the recipe I lost it again. I don’t think baking at 2am is a great plan, but neither is my insomnia and desire to see what else you have posted on here. Good luck with the remodel work because that is WORK!
