Happy Healthy Monday

Well I did manage to lose a pound this past week so I am excited by that considering I didn horrible on bringing my lunch to work. I am getting bored with what I am bringing so if you could PLEASE give me some ideas I would appreciate it.

Work has been soooo busy and I love it. I love that I am learning something new. I pray this is a job I can stick with forever. I am tired of changing every few years. I do like my new boss and the people I work with which is a HUGE change and a good one. Less stress equals less eating!

Goal for this week is to get the the gym at least twice this week PLUS get started doing the Wii again. I am going to try to do with with my 2yo so it makes him feel a part of it. Wish me luck on that!

I hope eveyone has a super duper week.. now here is your recipe to drool over.

Peanut Butter and Banana French Toast

“An unique and delicious recipe that my mom used to make. It is so easy that even kids can help to make it. Serve it hot with butter or margarine and syrup.”

Ingredients

  • 1 egg
  • 1 dash vanilla extract
  • 2 tablespoons creamy peanut butter
  • 2 slices bread
  • 1 small banana, sliced
  • 2 tablespoons butter

Directions

  1. In a small bowl, lightly beat the egg and vanilla together.
  2. Spread 1 tablespoon of peanut butter on top of each slice of bread. Place the banana slices on top of one of the slices of bread. Place the other slice of bread on top of the first, to make a peanut butter and banana sandwich.
  3. In a skillet or frying pan, melt the butter over medium heat. Dip the sandwich into the egg mixture and place in the heated skillet. Cook until brown on both sides. Serve hot.

    I’m just getting back into the swing of things with #Mamavation, so I haven’t read all your posts lately. But, I get a lot of good, quick and easy recipes from my Weight Watchers cookbooks. If you let me know what types of foods you like to eat then maybe I can recommend a few. They also have a lot of great recipes on their website.

    My goal (and birthday request) is for a Wii. Hopefully DH gets the message 🙂

  3. Glad that the job is going well and that you’re feeling good about it. Bringing a lunch is so, so, so hard! I don’t like to pack one at all! I’m still on mat leave until the new year but things that you can try are veggies and hummus (the more colourful, the better!), a nice spinach, strawberry salad with red onion and a squeeze of fresh lemon. Salmon pita wrap with spinach instead of lettuce…I’m not sure if that appeals to you or not. Google online to get ideas and then cater them to include clean foods.

  4. Congrats on the pound! Can you take leftovers from dinner for lunch? If not then look at usual sammiches, salads, curry w/ rice, etc. I have no idea what you like. Good luck getting into your lunch time groove. Also, I am glad you like your job so much.

  5. Salads, wraps, leftovers. Even a fruit salad with yogurt and half a sandwich. All great lunch options. Maybe make a list of all the lunches that you DO like, and put them into a rotation. It’s predictable and easy, yet keeps things from getting boring.

    Hope the job is going well. I’m trying to find a decent computer schedule so I can still get things done but hang out and catch up with my Sistas! Love ya!

    I second the veggies and hummus idea. It’s really filling and nutritious. Greek yogurt also. I love the texture. Have you tried curried lentils?

    sounds like a delicious recipe.

    Thank you for sharing it. I like the way you put the nutritional info below too.

    Personally, I never had a problem with weight. I would need to change the peanut butter for Tahini and the banana with maybe blueberries, because unfortunately I cannot tolerate peanut butter and banana.

    I learned somewhere that ordinary margerine is one molecule away from plastic.
