Happy Healthy Monday

I am tired. It’s one reason I hate Monday’s.  Sunday night I seem to think I can stay up later because I am not tired enough to go to bed. I got about 5 hours sleep so it will catch up with me today.

I have to give myself a pat on the back becuase for the past 3 weeks I have brought my lunch with me to work. I may have missed a day or two but it’s much better than going out everyday.  I have to become a frugal queen because as of next week I am paying for 2 houses which will suck.  I really need to become obsessed with coupons I think.  I am just not patient.

This week I didn’t gain nor did I lose so I guess that is okay. I am going to be having some giveaways coming soon to the site which one will be for me to review a Leslie Sansone DVD and then do a giveaway. I am excited for that. I don’t have any of her DVD’s as I have lost some so I will be happy to do that and I think it will be okay for my knees.

We got new living room furniture over the weekend, FB friends can see pictures on my page. I am almost afraid to sit on them. It looks so good.

Irish Soda Bread with Raisinets

Servings: 8

Ingredients

Nonstick cooking spray
2 cups all-purpose flour
1/4 cup granulated sugar
1 1/2 teaspoons baking powder
1 teaspoon salt
3/4 teaspoon baking soda
3 tablespoons unsalted butter, chilled
1 cup lowfat buttermilk
1/2 cup (3 ounces) NESTLÉ RAISINETS Milk Chocolate-Covered Raisins
1 tablespoon decorating or coarse sugar

Directions

PREHEAToven to 375° F. Spray 8-inch-round cake pan with nonstick cooking spray.PLACE flour, granulated sugar, baking powder, salt and baking soda in food processor; pulse to combine (or, combine ingredients in large bowl). Add butter to food processor; pulse until mixture resembles coarse meal (or, cut butter into pieces, add to bowl and use fingertips to rub until coarse meal forms). Add buttermilk to food processor; pulse to combine (or, make well in center of flour mixture, then add buttermilk and stir dry ingredients into milk to blend).

TURN dough onto floured surface; gently knead in Raisinets. Form into ball. Place ball in prepared pan (dough will not come to edges of pan). Sprinkle top with decorating sugar.

BAKE for 40 minutes or until golden brown. Cool in pan on wire rack for 10 minutes; remove to wire rack. Serve warm or at room temperature.
