Happy Healthy Monday

Well I can say I am about 10lb lighter… I got my heavy thick hair all chopped off. LOL I wish it was from weight loss though. With the summer heat I knew it was time to let the long hair go. I have to say I like the wake up and go look. Everyone this morning was like “Hey WTH” LOL

As far as weight loss goes. I really need to find my scale and see where I am at. Last week I managed to bring my lunch so that helped to not get fast food.  This week I am working on more water and healthier choices. It helps that sweet corn is coming in season because I will eat that 4 days a week. It’s the one bonus of  living in Iowa.  How is everyone doing on their healthy journey?

Well I must start my day but here is a great recipe to enjoy!

Servings: 4

Ingredients

1/2 cup Apple NESTLÉ® JUICY JUICE® All Natural 100% Juice
1/4 cup pure maple syrup
4 slices ripe pineapple, peeled
2 peaches, cut in half, pits removed
4 scoops Vanilla DREYER’S or EDY’S SLOW CHURNED Light Ice Cream

Directions

COMBINE Juicy Juice and syrup in small saucepan over medium heat. Bring to a boil; reduce heat to low and cook for 5 minutes or until slightly thick. Remove from heat and cool slightly.

PREHEAT grill. Brush fruit lightly with a small amount of syrup. Grill fruit, brushing occasionally with additional syrup, for about 2 to 3 minutes per side or until nicely browned.

REMOVE fruit to individual dishes and top each with a scoop of ice cream. Drizzle with remaining syrup.
