Happy Healthy Monday

Happy Monday.. Hope everyone had a great Mother’s day. My day wasn’t anything special but it was nice and relaxing. StrawberriesI did by myself a new laptop, it’s purple. Yeah me. My netbook was driving me nuts. I kept hitting the wrong keys so I needed something else. The netbook will be nice for traveling, like to Chicago next month.

Health wise this week was just okay. I did have a gain this week but I did got out to dinner the night before WI so it was expected. I am disappointed that I didn’t make my 115oz water goal. I will keep the eye on the prize. Speaking of water….

 

Aquahydrate is our sponsor this week. I haven’t heard of them so I had to check out their site. I would be very interested in trying this. Sounds like a nice crisp clean water. But do you know what sold me on it for sure? Did you check out the true believerspage? Hellooooo Mark Walhberg! That man is hot. If he is drinking it I would love to drink it and dream about him while drinking it. Okay.. must move one.. Oh Markie Mark..(did I just age myself)

Okay back to my goals this week. I have scheduled time to exercise this week. I am planning on doing the Wii fit or the EAS Active, I have both, and actually getting to the gym at least once. I am trying to get into the mindset of changing one small thing at a time. I find if I try to change everything I get frustrated and quit.

Okay I better get some work done.. boss is in a “mood” today. Yeah me.. Have a great day everyone!

Balsamic Strawberries with Almond Mascarpone Crème (from meals.com)

Estimated Times
Preparation Time: 15 mins
Cooking Time: 5 mins
Cooling Time: 10 mins standing

Servings: 6

1/3 cup balsamic vinegar
2 teaspoons granulated sugar
Half of an 8-ounce container mascarpone cheese
3 tablespoons Parisian Almond Crème Flavor NESTLÉ COFFEE-MATE Liquid Coffee Creamer
4 cups quartered fresh strawberries
2 tablespoons light brown sugar
Pinch ground black pepper
Grated or shredded fresh lemon peel for garnish
COMBINE vinegar and granulated sugar in small saucepan. Bring to a boil; reduce heat to medium. Cook gently until reduced by half. Pour into small bowl and cool to room temperature.

PLACEmascarpone cheese and Coffee-mate in small mixer bowl; beat until smooth. Refrigerate until ready to use.

COMBINEstrawberries and brown sugar in large bowl; toss gently. Let stand for 10 minutes. Sprinkle with pepper; toss gently to coat. Spoon about 1/2 cup strawberries into individual bowls; drizzle with balsamic syrup. Top with large dollop of mascarpone mixture. Sprinkle with lemon peel.

Cook’s Tip: Try substituting any flavor of liquid Coffee-Mate.

    You know, I think we all hit a crunch this week with it being Mother’s Day, so don’t be too hard on yourself.

    Pick up this week like next week didn’t happen and run with it!

    And yeah… drink your water!

  5. You’re doing great! Small changes lead up to big losses!!! You may not have made your water goal, but think of all the foods you’ve eaten this week that contain water!!! You more than likely did make your goal. 🙂

    That strawberry recipe looks yummy. I’m going to try it. I tried another recipe once that mixed strawberries with balsamic and I was surprised at how well they went together.
