Weight Loss Monday
What a week it’s been. Ever since I got back from Chicago it seems my weight is on the rise. I can’t really afford weight watchers, but would love to know the new plan, I have decided to log my food on Sparkpeople. It’s another site I have used for years, on and off, and love. It’s free after all. If you are on Spark look me up, I am bkbond.
I hope my Mamavation Sistah’s are doing fantastic. I hope to be more active. I could use the support. I don’t get much in real life so my online friends mean the world to me. I hope you all still will welcome me. If you all could give me a nudge to drink water I would appreciate it.

Potato Pancakes with Applesauce

Servings: 8
Ingredients
4 whole green apples, cut into eighths
2 1/2 cups Apple NESTLÉ® JUICY JUICE® All Natural 100% Juice
6 red potatoes, peeled and grated
1 onion, peeled and grated
1 large egg
10 tablespoons corn oil, divided
1/4 teaspoon salt
1 cup sour cream
Directions
SIMMER apples (not peeled, cored or seeded) in Juicy Juice for 30 minutes or until very soft. Drain, reserving the liquid. Push apple through sieve and discard peel and seeds. Simmer liquid to reduce by half and stir into applesauce.
COMBINE potato and onion in large mixer bowl. Beat egg with 2 tablespoons oil and salt; combine with potato mixture.
POUR enough remaining oil into a large skillet to cover bottom with about 1/16 inch of oil. Heat to very hot but not smoking, and drop potato mixture in by heaping tablespoons. Flatten immediately so pancakes are about 4 inches in diameter (smaller pancakes will burn). Try to keep them neatly round. Fry for 3 to 5 minutes or until golden brown; flip and brown other side. Drain on paper towels. Serve with applesauce and sour cream.

Stay positive. I know DIY Heather has been telling people that lately, and it is so true. Start telling yourself you are eating better. You are losing weight. Convince your mind so your body can follow. It can make it easier to make the right choices. I hope food logging helps you out. Nutrition is my biggest struggle. I make good food, but eat too many calories overall.
