Quick Healthy Breakfast Ideas: Ham and Cheese Frittata {New Food Friday}
I know it’s been awhile since I have done a new food Friday post but here is a great quick healthy breakfast ideas that is sure to make your morning a snap. Bake these little guys ahead of time (using some leftover ham from a family event) and just grab and go. This is a breakfast I like. Enjoy
Leftover Ham and Cheese Frittata
Ingredients:
Cooking spray
1/2 cup finely chopped onion
2/3 cup chopped Hormel Ham (if you have leftover ham from a family party this is perfect)
1/3 cup (about 1 1/2 ounces) shredded reduced-fat extra-sharp cheddar cheese
2 tablespoons chopped fresh chives
1/8 teaspoon dried thyme
1/8 teaspoon black pepper
4 large egg whites
1 large egg
Directions:
Heat oven to 350°.
Heat a large nonstick skillet coated with cooking spray over medium-high heat. Add onion; cook 2 minutes or until crisp-tender. Add ham; cook 3 minutes. Remove from heat and cool 5 minutes. Combine remaining ingredients in a large bowl then stir with a whisk. Add ham mixture, stir with a whisk. Spoon mixture into 24 mini muffin pan coated with cooking spray. Bake at 350° for 20 minutes or until set.
