Quick and Easy Dinner Idea: Chicken Enchilada Skillet {New Food Friday}

This chicken enchilada skillet is a great go-to weeknight recipe that can be easily made in a skillet on your stovetop. Unlike most enchilada recipes, there’s no rolling, filling or baking involved, meaning it comes together quickly and easily. If your family likes Mexican recipes, be sure to give this one a try; hearty, good-for-you meals don’t get any easier!
Chicken Enchilada Skillet

Serves: 6 (1 cup each)
Ingredients
- PAM® Original No-Stick Cooking Spray
- 12 corn tortillas, torn into bite-size pieces
- 3 cups shredded cooked chicken (3 cups = about 12 oz)
- 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, undrained
- 1 can (10 oz each) red enchilada sauce
- 1 can (8 oz each) Hunt’s® Tomato Sauce
- 1 cup shredded Cheddar and Monterey Jack blend cheese, divided
Spray a large nonstick skillet with cooking spray. Add tortilla pieces and chicken; mix well. Cook over medium heat for 5 minutes until hot, stirring frequently.
Pour the undrained tomatoes and enchilada and tomato sauces over the chicken mixture in the skillet. Mix well. Sprinkle ½ cup cheese over chicken mixture. Cover the skillet and cook for 5 minutes or until hot, stirring occasionally. Sprinkle with remaining ½ cup cheese and serve immediately.
Tip: Top with sour cream and salsa if desired. You may also add black beans or corn to the tomato sauce and chicken mixture, if desired.
