Leftover Turkey Recipes {New Food Friday}
Wondering what to do with all that leftover turkey that is in your fridge? Here are a couple recipes that you can use for that or if you didn't have turkey and want to make it grab yourself some Jennie O turkey and cook away.
Almond Turkey Cups
- 1 tablespoon vegetable oil
- 1/2 cup chopped red bell pepper
- 1/2 cup chopped onion
- 2 cups Jennie-O Turkey Store® Classic Young Turkey Breast, cooked and chopped (or leftover turkey would work)
- 2/3 cup sweet-and-sour sauce
- 1/2 cup almonds, chopped
- 2 tablespoons soy sauce
- 6 CHI-CHI'S® 6 inch Fajita Tortilla

Hot Open Face Turkey Sandwich
- 1 tablespoon olive or vegetable oil
- 1 package Jennie-O Turkey Store® Turkey Breast Cutlets, pounded to 1/4-inch thickness
- 4 large slices oval rye bread
- 1/4 cup plain low-fat yogurt
- 1 tablespoon prepared horseradish
- 1 tablespoon brown mustard
- 1 large tomato, sliced
- 1 ripe avocado, pitted, peeled and sliced
- 1 red onion, sliced
- 1 cup shredded low-fat Colby Jack cheese
- Fresh greens or basil, if desired

If you are still planning your Thanksgiving meal for this weekend and don't want to do a big turkey, consider getting Jennie-O turkey breast. Simple to eat and really really good! We had our office potluck last week and Jennie-O was the star of the show. We cooked it in a crock pot for a couple of hours and it just fell apart.
