Microwave it for approximately 1 minute, stirring every 20 seconds until the eggs are just set. For a change, substitute mozzarella for the cheddar and add 2 tablespoons of chopped tomato. An equally delicious option is adding 2 tablespoons of breakfast sausage or cooked bacon crumbles to the egg mixture.
Quick Healthy Breakfast
For the health conscious, a fruit salad is a great choice for a quick healthy breakfast. To make this, mix 2 cups of cut-up fruit with 1 tablespoon of chopped mint, the juice of 1/2 a lime, and 1 teaspoon of honey.
Apple lovers will love the stuffed apple. To make this, miss a few tablespoons of melted peanut butter with a handful of granola. Stuff the mixture into a cored apple and then cut into segments.
Some would prefer to prepare something the night before so that they can grab and go. For them, scones are a wonderful and delicious choice. To make, mix 2 cups of self-rising flour and 1/4 cup of sugar, then slowly work in 1/2 stick of softened butter by hand. Stir in 3/4 cup of milk. Spoon into a uttered 6-cup muffin pan and bake at 400 degrees for 20 to 25 minutes.
