quick healthy breakfastBreakfast is actually my favourite meal of the day, I find with the easiest of thought I am totally inspired by all sorts of ingredients and cuisines when it comes to the first meal of the day. For example you might not think of Thai recipes when it comes to breakfast, but a fruit salad is a common Thai breakfast which is also enjoyed all over the world!

 

A really beautiful quick helathy breakfast for the whole family is my tasty everyday fruit salad. The more people eating the more fruit variety you can add I find.

 

Every day fruit salad

(There are no set quantities you know how much fruit you want, but this will serve around 4 people)

 

2 big handfuls of green grapes

1 crunchy green apple cut into small chunks

Half a fresh pineapple (tinned is also fine) cut into chunks

2 kiwi fruits

Melon of choice- my favourite is watermelon. If you can stretch to it two varieties of melon is nicer, consider honeydew or galia. Cut into chunks and use around 3 handfuls in total

1 mango (nicely ripened) cut into chunks

1 orange cut into slices (use knife to de-skin leaving the juice to ooze out over the other fruit)

1 juice of lime

4 passion fruits scooped out and mixed in

Coconut, use a small handful of either freshly grated coconut but I love the desiccated packet variety.

On top or on the side a giant tub of low Greek yoghurt and if you’re not counting all the calories add some honey as well

 

I first started to make this type of fruit salad on my first trip to Thailand over 10 years ago, this is where I fell in love with the amazingly fresh fruit they have. The great thing about any fruit salad is you can pick and choose and here you can select what is in season such as; summer berries, peaches, satsumas or even figs.

I love fruit in the morning. I need a quick healthy breakfast because time isn't on my side. This salad I can do in advance and package it up so I can just grab and go. Perfect! Karla Bond- Publisher, Bond With Karla
