Happy Healthy Monday

Okay I really don’t have that much to say because I sound like a broken record.  Still need to get my crap together before I hit the 300lb mark. So I am just going to say a few things.Granola

I am not doing the blogging carnival because I will not get my face on camera, eww, too fat. So I hope I get to see a bunch of you tonight!

Crunchy Dark Cherry Raisinet Granola

Preparation Time: 10 mins
Cooking Time: 25 mins
Cooling Time: 20 mins cooling

Servings: 25 servings (1/4 cup each)

1/3 cup maple syrup or honey, at room temperature
2 tablespoons butter
4 cups old-fashioned oats, uncooked
2 cups total of mixed nuts and seeds (chopped pecans, chopped almonds and shelled sunflower seeds)
1/4 teaspoon salt
1 package (4 ounces) Cherry NESTLÉ RAISINETS Dark Chocolate-Covered Dried Cherries
1/2 cup sweetened dried cranberries or chopped crystallized ginger (optional)

PREHEAT oven to 350º F. Combine syrup and butter in medium, microwave-safe bowl. Microwave on HIGH (100%) power for 30 seconds or until bubbly.

COMBINE oats, nuts and seeds and salt in large bowl. Drizzle with syrup mixture; stir to coat. Spoon mixture onto jelly-roll pan or rimmed baking sheet.

BAKE, stirring occasionally, for 25 minutes or until golden. Remove from oven and cool completely in pan on wire rack. Add Dark Chocolate Cherry Raisinets and dried cranberries. Store in sealed container for up to 3 weeks.

  2. You know, I thought the same thing about getting on camera tonight. But then I thought, Mamavation Sista’s don’t judge! Who cares if I didn’t have make up on and my hair was thrown up… I didn’t actually go on. I added to my post last minute and cameras were full. But I was ready 🙂

    As far as getting on camera I was a little nervous about it but, then thought this is about me, I wanna get fit. I need to start facing my fears so I can get healthier. If that means the poor sista’s have to stare at my ugly mug for an hour than so be it! Lol. I started to feel alot less nervous as time went by! Hang in there and reach out to us were all in the same boat.
